Chinese tea

Chinese tea types in China trade industry: Chinese tea can be classified into the following seven types: white tea, green tea, Oolong tea, black tea, flavored tea, compressed tea and instant tea.
The professional classification for Chinese tea:

Chinese tea can be divided into two groups: basic tea group and reprocessed tea group.

The basic tea group: The materials for basic tea type are exactly only the fresh tea leaves plucked from tea plants( Camellia sinensis ). According to different processing methods and different oxidation degree of the polyphenols,basice tea type include the following six types: white tea, yellow tea, green tea, Oolong tea, black tea and dark tea.

The reprocessed tea group: Any of the basic teas (white tea, yellow tea, green tea, Oolong tea, black tea or dark tea) are used as materials for reprocess.....sometimes other materials are added. According to different processing methods, the reprocessed tea group can be classified as: scented tea;spice tea;compressed ta;extracted tea;fruit flavored tea; health tea etc...

Chinese tea culture
Chinese tea culture has a long history.Tea culture entered its most prosperous ear in Tang and Song Dynasty, which had evolved into a condition that the fashion drinking tea had extended all over the country and tea had thus won the status as national beverage. And at that moment Luyu who was honored as " the Saint of Tea" and his masterpiece The Scripture of Tea appeared which promoted the China tea culture to an altitude that had never been previously attained. Those continually emerging eminent figures in the tea industry propelled an intentional pursuit for water, tea, tea set and decoction in tea drinking to such an extreme elegance, perfection, delicacy and sophistication, so much so that in late Tang and Song Dynasty, an extravagant fashion was formed and occurred in tea culture.

That the fashion drinking tea had extended all over the country and tea had thus won the status asnational beverage. The Buddhist monks also began drinking tea in large quantity in order to attain a better meditation on Buddhism. Their study on tea, interpretation of tea and pursuit for tea was completely different from the secular people. With the introduction of religious tinge and Buddhist meditation into the tea culture, a unique phenomenon in the history of China tea culture came forth, that is an integration of tea and Zen.

After Ming and Qing Dynasty, China Green Tea culture seemed to take on a tendency of returning to the most basics in nature with less people deliberately seeking quality water and less occasions on which tribute tea was blindly elaborated. People paid more attention to and placed more stress on the pure flavor of tea and its inherent taste through which spiritual pursuit could be realized, solace to soul could be obtained and the pursuit for a supreme bourn that human being and nature had been integrated into one entity could be attained.

Tea culture is of much elegance. In the contemporary society,Green Tea culture plays a role of enriching cultural and leisure life, promoting the development of tea-related economy and trade, and propelling culture exchange between nations. In the 21st century, tea culture will grow to an even larger scale, involve an even wider range of fields, perform an even stronger function and bring an even closer integration of tradition and modern times which will in turn promote tea culture to an international level.

Chinese tea consists of tea leaves which have been processed using methods inherited from China. According to popular legend, tea was discovered by Chinese Emperor Shennong in 2737 BCE when a leaf from a Camellia sinensis tree fell into water the emperor was boiling. Tea is deeply woven into the history and culture of China. The beverage is considered one of the seven necessities of Chinese life, along with firewood, rice, oil, salt, sauce[clarification needed] and vinegar.

Some writers classify tea into four categories, white, green, oolong and black. Others add categories for red, scented and compressed teas. All of these come from varieties of the Camellia sinensis plant. Chinese flower tea (花茶), while popular, is not a true tea. Most Chinese tea is consumed in China and is not exported. Green tea is the most popular type of tea used in China.

Within these main categories of tea are vast varieties of individual beverages. Some researchers have counted more than 700. Others put the number at more than 1,000. Some of the variations are due to different strains of the Camilla plant. The popular Tie Guan Yin 鐵觀音, for example, is traced back to a single plant discovered in Anxi 安溪 in the Fujian province. Other teas draw some of their characteristics from local growing conditions. The largest factor in the wide variations comes from differences in processing after the tea is harvested. White and green teas are cooked soon after picking to prevent oxidization, often called fermentation, caused by natural enzymes in the leaves. Oolong teas are partially oxidized. Black and red teas are fully oxidized. Other differences come from variations in the processing steps.
