「史卡伯羅市集」(Scarborough Fair) 最原始的形式是歌謠（the ballad），起源於十七世紀的蘇格蘭，一個妖精對一女子揚言，除非她能完成一件艱鉅的工作，否則要娶她為妻。該女子也給他列了一長串他必須完成的，困難重重的工作表，終於嚇退了妖精。

 

這個歌謠經過傳播，改寫，留傳到十八世紀時，已經版本繁多，「芫荽，山艾，迷迭香與百里香」的副歌可能留傳到十九世紀才定型。比較受人傳唱的版本屬於男女對唱，歌詞如下：

Are you going to Scarborough Fair?
Parsley, sage, rosemary and thyme

Remember me to one who lives there,
For she/he once was a true love of mine.

石楠 (heather) 是甚麼？老實說，我也不清楚這種植物能做甚麼用，但由它的外形判斷，纖維不可能堅韌，看來要做繩子恐怕性質不合，也就是暗指，那是一種困難的任務。

芫荽，山艾，迷迭香與百里香四種香料的意義：這四種植物同時也是藥草 (herbs)，它們所代表的意義就像今天紅玫瑰之於我們。

 

芫荽 (parsley)

也有人翻成香芹，可以減輕消化不良所產生的疼痛，醫療上還可以安神。這四種都是parsley, 真的都很像我們常見的香菜，但據我所知，味道不一樣，有的人在做西餐的時候甚至會用九層塔去取代。

 

山艾 (sage)

或翻鼠尾草，是藥草，也是睿智之人(wise man)

 

迷迭香 (rosemary)

象徵忠誠，愛情和回憶。現在還流行當茶喝。

 

百里香 (thyme)

象徵勇氣。

 

這四種香料曬乾之後混合在一起使用時，我最常用在烤肉上，整塊梅花肉抹上香料，鹽巴，微煎，鎖住肉汁之後，直接送進烤箱，烤到肉層中間呈粉紅色就好，過火就太熟，會減低鮮度和嫩度。上桌時愛吃多少切多少，可以不需要沾醬料，肥美多汁，鮮嫩可口，不會油膩，非常好吃！
